In the final semester of my wine valet course at one of our wine dinners we were served, unknown to us, a Brunello di Montalcino wine. When the 1st drops of this noble liquid reached my lips I let out a single word, asserted slower than normal, Sangiovese. The carton is one litre, put simply it holds a 3rd more than the standard bottle. Then introduce the blue cheese and have them taste the wine again. Burgundy grapes. The second pairing concerned a meatless lasagna full of cut olives, peas, onions, cottage cheese, and catsup, and covered with mozzarella cheese.
But the salsa was too powerful for the wine.
